Blueberry Chia Oats

Start your day off, fueling your body with a simple, well-rounded breakfast that will keep you full all morning long. Even my husband has adopted this as his go-to breakfast every single morning and we both feel incomplete if we haven’t had our oats in the morning.

Breakfast is definitely my favorite meal of the day and I wake up looking forward to my oats every morning!

No matter your fitness goals, it is important to start your day off with proper fuel.  Carbohydrates to wake you up, fuel your brain and to give you long-lasting energy, fiber to keep you full, blueberries for all the multi-vitamins, nutrients and sweet, yummy flavor and a plant  protein powder for those amino acids and BOOM total breakky in a bowl, in under 5 minutes!

Bonus: This recipe is ridiculously SIMPLE and QUICK - perfect for someone on the go. Sometimes I take mine to work or eat it in the car.


⅓ Cup Gluten Free Oats

¼ Cup Blueberries

1 Tbsp Chia Seed

1 Scoop Vegan Protein Powder (I use vanilla flavored)

Cinnamon to taste

Boil water.

Combine oats, blueberries, chia, protein powder and cinnamon in a bowl.

Pour hot water to your preference of oat thickness (I love my oats fairly watery but my husband prefers his much stiffer with less water :)

Let sit for 3-4 minutes so flavors combine.

In my opinion, this dish doesn't need sweetener but if oatmeal is a new thing for you and you’d prefer it a bit sweeter, you could add honey, agave, stevia, or rice malt syrup if your diet allows for these :) Also, if I’m feeling more hungry than normal, I’ll add a chopped up apple or raspberries.

Final Pro-Tip: If you’re a volume eater like me, I grate half a zucchini and mix it into my oats. It helps add volume without distorting the flavor!! Skeptical? Give it a try and let me know what you think!!!
